We are seeking a Sushi Chef for a high-end sushi restaurant in Miami. This location is an overseas expansion of a renowned Tokyo-based sushi brand, highly acclaimed in Japan for its authentic Edomae style. We are looking for a professional who can embody uncompromising technique and Japanese craftsmanship in a market where guests have a refined appreciation for fine dining.

Compensation
$90,000–$110,000 + performance bonus(Commensurate with experience and track record)

Sushi Chef (Omakase experience preferred)
Responsibilities
- Sushi counter service (nigiri, sashimi, omakase)
- Fish inspection, preparation, and aging management
- Rice preparation and quality control
- Sushi execution according to course structure
- Food cost control and waste management
- Collaboration with the kitchen team
- Compliance with DOH sanitation standards
- Explaining Japanese sushi culture and ingredients to guests
This role requires more than technical skill. You will serve as the face of the counter, creating a refined guest experience.
Qualifications
- Minimum 3 years of experience as a sushi chef
- Experience in high-end or omakase-style restaurants preferred
- Strong fish handling and knife skills
- Comfortable communicating with international guests
- Basic English proficiency for guest service
- Team-oriented mindset
