One of NYC’s most acclaimed modern sushi groups is looking for a Head Sushi Chef to lead the kitchen at its flagship location in Manhattan. With multiple high-performing restaurants across the city and a reputation for delivering premium sushi in an elegant, contemporary atmosphere, this group represents the next generation of upscale Japanese dining in New York.
The incoming chef will take charge of the main kitchen operation — not a small omakase counter, but a high-volume sushi restaurant known for both exceptional quality and beautiful plating. The team plans to open additional locations in the near future, and this role offers the opportunity to shape the future of the group’s culinary direction.

Responsibilities
- Lead daily sushi operations at a high-volume, upscale restaurant
- Oversee fish procurement, prep, and quality control
- Manage and train sushi chefs and kitchen staff
- Maintain food safety, hygiene, and organizational standards
- Collaborate with ownership and front-of-house leaders to maintain exceptional guest experience
- Innovate within traditional sushi formats (rolls, nigiri, sashimi), balancing creativity with consistency
Requirements
- Proven experience as Head Sushi Chef at a high-end, high-capacity sushi restaurant
- Strong leadership and staff development skills
- Excellent knife skills and mastery of fish preparation
- Deep understanding of traditional sushi techniques with modern execution
- Ability to maintain consistency and quality in a fast-paced environment
- English proficiency required
- Must be authorized to work in the United States
