A refined Japanese restaurant in Philadelphia is seeking an experienced Sushi Sous Chef to join the team. With a focus on premium ingredients and traditional techniques, the restaurant delivers an exceptional dining experience centered around expertly crafted sushi.

  • Oversee the preparation and presentation of sushi with top quality and consistency
  • Assist Executive Chef in general kitchen operations, inventory, and cost control
  • Train and supervise sushi staff, fostering a collaborative team environment
  • Contribute to new menu development and creative sushi concepts
  • Ensure compliance with health and food safety standards, particularly with raw fish handling

Requirements

  • Proven experience as a Sushi Chef in a high-volume, quality-focused environment
  • Previous kitchen management or Sous Chef experience
  • Strong leadership and organizational skills
  • Knowledge of local food safety regulations and raw fish handling
  • Current ANAB-accredited state-approved Food Safety Certification (required)
  • English fluency required
