An authentic Edomae sushi restaurant in Las Vegas is seeking a Sushi Chef.
This position is centered on omakase service at an intimate counter, where refined sushi technique and professional counter presence are essential. It is well suited for someone who values the quality of each piece, including fish handling, preparation, sushi rice, topping temperature, and timing of service.

Compensation
$130,000 annual salary
Final compensation will be determined based on experience and skill level.
Main Responsibilities
- Preparation, cooking, and service of Edomae sushi and omakase courses
- Fish preparation, aging, curing, and cutting
- Sushi rice management, topping preparation, and timing of service
- Serving sushi at the counter
- Ingredient management, quality control, and sanitation management
- Working closely with the chef and kitchen team
- Maintaining the quality standards of a high-end sushi restaurant
Requirements
- Professional experience as a sushi chef
- Experience in Edomae sushi, omakase, or high-end sushi restaurants preferred
- Fundamental skills in fish preparation, cutting, and nigiri
- Ability to work carefully, cleanly, and with attention to detail
- Ability to value proper counter presence and service flow
- Must be able to work in Las Vegas
