A popular Japanese restaurant in Manhattan, New York is seeking a Head Sushi Chef.

This position requires more than strong sushi-making skills. The restaurant is looking for someone who can lead the entire sushi department, manage the team, maintain consistent quality, and work closely with the kitchen and service teams to drive the overall sushi operation.

Candidates with previous experience as a Head Sushi Chef, Executive Sushi Chef, or in a similar leadership role will be prioritized. This position is well suited for someone who can take responsibility for staff direction and training, prep and service operations, quality control, and overall team leadership.

Main Responsibilities

• Manage sushi counter and sushi department operations
• Oversee quality control for sushi, sashimi, and prep work
• Provide direction, training, and leadership to staff during service
• Manage ingredients, prep volume, and food waste
• Coordinate with the kitchen and service teams
• Suggest improvements to enhance the overall quality of the restaurant

Qualifications

• Experience as a Sushi Department Leader, Sushi Head Chef, or in a similar leadership role
• Strong professional experience as a sushi chef
• Experience leading a team
• Ability to make sound decisions and give clear direction during service
• Responsible, reliable, and able to maintain consistent quality
• Able to work in New York
