A Japanese restaurant in the Seattle / Bellevue area of Washington State is currently hiring for Sushi Chef and Kitchen Head candidate positions.
The restaurant is based on a casual sushi concept while also incorporating some omakase-style elements. We are looking for candidates who can handle sushi, rolls, prep work, and fish preparation, or candidates who are capable of overseeing the overall kitchen operation.
This position is suitable for someone who can work efficiently in a busy restaurant environment, including weekends, and who can move quickly during peak service.
Candidates who are already authorized to work in the United States are preferred. However, applicants from Japan may also be considered depending on experience and skill level.

Main Responsibilities
- Sushi, rolls, and prep work
- Fish preparation and sushi topping management
- Handling orders in a casual sushi restaurant setting
- Sushi service with some omakase-style elements
- Managing overall kitchen operations
- Fast-paced service during peak hours
- Coordinating with staff and giving clear instructions
- Ingredient management, sanitation control, and quality control
Requirements
- Practical experience in sushi or Japanese kitchen operations
- Ability to handle sushi, rolls, and prep work
- Ability to work quickly and efficiently in a busy restaurant environment
- Availability to work weekends
- Basic English communication skills with staff
- Flexibility to adapt to sushi restaurant operations in the United States
- Strong teamwork skills
Preferred Qualifications
- Currently authorized to work in the United States
- Able to start without visa sponsorship
- Interested in working in the United States from Japan
- Able to oversee not only sushi but also the overall kitchen operation
- Experience as a Head Chef, Sous Chef, Kitchen Leader, or similar role
- Experience working in an English-speaking environment
Compensation
Estimated annual salary: $80,000 – $100,000
Final compensation will be determined based on experience, skill level, and position.
Work Schedule
- 5 days per week
- 2 days off per week
- Shift schedule including lunch and dinner
- Weekend availability required
