A luxury restaurant group in Miami is seeking a Head Sushi Chef.
This group is one of the most popular luxury restaurant brands in Miami’s dining scene, known for its sophisticated atmosphere and high-quality cuisine.
The sushi program is based on traditional Japanese techniques while incorporating a modern and creative style.
The restaurant has a very strong customer draw and operates as a high-volume luxury establishment, welcoming several hundred guests in a single evening.
In this position, you will be responsible for leading the sushi section, overseeing food quality, team management, and overall operational execution.

Key Responsibilities
- Lead the sushi kitchen and sushi counter operations
- Maintain high quality standards for sushi preparation
- Oversee fish sourcing, breakdown, curing, and preparation
- Manage sushi rice consistency and recipes
- Train and supervise sushi chefs and kitchen staff
- Manage operations in a high-volume luxury restaurant environment
- Ensure culinary standards align with the restaurant brand
Requirements
- Experience working in upscale sushi restaurants
- High-volume restaurant experience preferred
- Michelin restaurant experience is a strong plus
- Leadership and kitchen management skills
- Ability to communicate effectively in English
