A well-established and acclaimed restaurant group based in New York is launching a new Japanese dining concept in Washington, D.C. We're seeking a Sushi Executive Chef to lead the sushi program from the ground up. This is a rare opportunity to shape the direction and standards of a brand-new kitchen in collaboration with a respected team.

  • Prepare sushi offerings (nigiri, rolls, sashimi) based on the menu and guest preferences
  • Evaluate and ensure the quality and freshness of all fish and produce
  • Maintain cleanliness, hygiene, and organized storage of food and equipment
  • Collaborate with kitchen staff to provide smooth and timely service
  • Support the development of new sushi dishes and seasonal specials
  • Adhere to strict food safety and sanitation regulations

Qualifications

  • Fluent in professional-level Japanese
  • Prior experience in a sushi chef or similar leadership role
  • Proficient knife skills and mastery of sushi techniques
  • In-depth understanding of food handling and safety practices
  • Ability to manage time and multitask in a high-volume environment
  • Excellent communication skills and team-oriented mindset
  • Culinary certifications or degrees are preferred but not required
