A world-renowned luxury hotel in Manhattan is seeking an experienced Sushi Management Chef to oversee Japanese cuisine preparation and kitchen operations. This is a hands-on management position ideal for a culinary leader who excels in both execution and team development.
Key Responsibilities
- Prepare and oversee sushi, sashimi, and other Japanese dishes in line with quality standards
- Supervise food production, kitchen hygiene, and safety regulations
- Manage guest orders with attention to speed and hospitality
- Maintain par levels, inspect food quality and ensure proper storage and rotation
- Mentor and develop team members; support training and scheduling
- Ensure full knowledge of menu items and proper presentation
Qualifications
- Proven experience in sushi preparation and kitchen management
- Knowledge of food safety protocols (DOH/OSHA compliance)
- Strong leadership and organizational skills
- Ability to work flexible shifts, including nights and weekends
- English fluency for team communication and guest interaction
Salary
$90,000–$100,000 per year (based on experience)
