A new Japanese fine-dining restaurant scheduled to open soon in a prime Manhattan location is seeking a Sous Chef.
The restaurant will offer highly original cuisine rooted in Japanese cooking while incorporating French and Italian techniques and influences. This is an opportunity to apply your experience in Japanese cuisine while exploring new cooking methods and culinary expression.

Compensation
$80,000–$90,000 per year
Compensation above this range may be considered depending on the candidate’s experience and skills.
Main Responsibilities
- Support the Executive Chef in overseeing overall kitchen operations
- Prepare, cook, plate, and maintain the quality of all dishes
- Assist with the development of new menus based on Japanese cuisine
- Prepare dishes incorporating French and Italian techniques
- Train, supervise, and manage kitchen staff
- Manage ingredients, inventory, food costs, and purchasing
- Manage schedules and improve kitchen operations
- Maintain food safety, sanitation, and cleanliness standards
- Support pre-opening preparations and the restaurant launch
Qualifications
- At least 10 years of professional kitchen experience
- At least five years of experience as a Sous Chef, or seven years as a Senior Line Cook
- Advanced culinary skills and strong knowledge of kitchen operations
- Ownership of multiple professional knives and the ability to maintain them using whetstones
- Ability to lead a team and perform effectively in a high-pressure environment
- Availability to work nights, weekends, and holidays
- Knowledge of food sanitation and workplace safety
- Ability to stand for extended periods
- Ability to lift and carry approximately 50 pounds
- Legal authorization to work in the United States
Preferred Experience and Skills
- Experience in fine dining or upscale restaurants
- Professional experience in Japanese cuisine
- Experience with French, Italian, or modern cuisine
- NYC Food Protection Certificate
- Strong communication and management skills
- Ability to communicate in both English and Japanese
